Oat Milk Pancakes Recipe | Fluffy & Dairy-Free

Oat milk was born for brunch. It sneaks into the batter and makes pancakes so fluffy you’ll question why you ever bothered with regular milk. They’re soft, golden, and the kind of breakfast that makes you look like you’ve got your life together (even if you don’t).

Ingredients (4 servings):

  • 1 ½ cups self-raising flour
  • 1 tbsp sugar (or maple syrup)
  • 1 tsp baking powder
  • Pinch of salt
  • 1 ¼ cups oat milk
  • 1 egg (or flax egg for vegan)
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract

Steps:

  1. In a bowl, whisk flour, sugar, baking powder, and salt.
  2. In another bowl, mix oat milk, egg, oil, and vanilla.
  3. Pour wet into dry and stir gently until combined (lumps = fluff).
  4. Heat a non-stick pan, add a little oil, and spoon in batter.
  5. Cook until bubbles form, flip, and cook until golden.
  6. Repeat until you have a stack worthy of admiration.

Pairing Tip

Top with maple syrup, berries or a nice pistachio spread.
